Hi. Is it possible to simulate soyabean extraction on coco or CHEMSEP?

As long as you create the necessary pure component set and have a viable thermo model: yes.

Was asking because it has some solids in it, as for the soybean oil itself, was planning to assume it is a tryglyceride

you probably want to separate the solids off early - for example with the SolidSeparator unit.
